Holy Guacamole!

Have I mentioned my love for Mexican food? I can't stress it enough. I LOVE IT!

Guacamole. It's delicious. It is good with any dish, tacos, enchiladas, chile rellenos, or just chips! YUMMY. This is a basic guacamole that Steve's mom shared with me and I make it all the time. Guacamole is filled with fat, yes, but it is a healthy fat. Did  you know just how good Guacamole is for you? SO GOOD! I love eating something that tastes positively divine and then realizing that it is actually healthy as well. Didn't I say that simple ingredients make the best food? It's true, they really do!

I crush my guacamole with a fork. Sometimes I like it chunkier and other times not. It doesn't matter, do whatever makes you happy!

Ingredients:

1/2 t. Serano Pepper (minced)
1/2 tsp. minced garlic
1/2 tsp. sea salt
1 1/2 T. minced onion
1 T freshly squeezed lime juice
2 T. diced roma tomatoes
2 T. Cilantro
1 1/2 avocados

Combine all ingredients, crush, and serve immediately!

Tips: I usually make twice this much or more...it goes pretty fast in our house.
