Spicy Thai Noodles

My Favorite part of cooking: Hearing my husband tell me how delicious it is. It adds so much happiness to my life. I'm grateful for that.

This dish was no different. He loved it. It reminded us both of a dish we get at a local restaurant here in town. I love when that happens. A delicious meal for MUCH less of a price. score.

I first saw this dish on Pinterest. Where else? It's been repinned a bajillion times. The original recipe can be found here and I absolutely love her blog. As usual, I tweaked a few things from the recipe. I used Olive oil instead of Vegetable oil for a healthier choice and I didn't use whole wheat pasta for a less healthier choice. Just trying to balance things out here people :)

Spicy Thai Noodles

Ingredients:

Penne Pasta
1/4 Cup Olive Oil
1/2 Cup Sesame Oil
1-2 Tbsp. Red Pepper Flakes (I did 2 of course!)
6 Tbsp. Honey
6 tbsp. Soy sauce
Green Onions
Cilantro
1/2 of a Carrot
Peanuts

Directions:

1. Heat both of the Oils and red pepper flakes over Medium heat for 2 minutes. (BE CAREFUL: the first time I tried this I burned it. I had to start over because I didn't want my pasta tasting burnt. It heats up quicker than you think!)
2. Strain the oil from red pepper flakes- saving the oil.
3. Stir in the honey and soy sauce with the oil.
4. Put the cooked pasta into a bowl and pour the oil mixture over the top and stir to coat. There will be some liquid at the bottom--just keep stirring.
5. top with as many green onions, cilantro, slices of carrots, and peanuts as you would like (I just used a vegetable grater for my carrots) and stir to combine. Eat immediately so it doesn't get cold!
