Soup always sounds good when you're sick doesn't it? Sometimes it's because your throat hurts- but mostly I think it is because the feeling of something warm going down your throat and into your tummy is just down right comforting.
The hubs is not usually a big soup guy- he just doesn't feel like it fills him up. I found a solution to that. Stew. It is more filling and just as delicious. So to help us all feel a little better, I made some Hearty Chicken Stew and it definitely hit the spot. It's much much thicker than a soup and I wasn't sure if I would like it-but I've had leftovers for the last 2 days so obviously I loved it!
Make this the next time you or a loved one are sick- or heck- just make it because it is delicious!
Hearty Chicken Stew
Ingredients:
-4 Carrots, chopped
-4 stalks celery, chopped
-1/2 Large Onion, chopped
-3 Cups good quality Chicken Stock.
-2 Sprigs fresh Thyme
-3 Sprigs fresh Rosemary
- 1 bay leaf
-handful of frozen corn
- 2 tsp. poultry seasoning
- 1/2 tsp salt (may not need it at all...taste it first!)
-1/4 tsp. pepper
-2 T. Corn starch dissolved in 1/4 cup water
-2 cups cooked and chopped chicken
Directions:
1. In a large stock pot, combine carrots, celery, onion, chicken stock, thyme, rosemary, and bay leaf. Bring to a boil. Once boiling, lower heat and let simmer until vegetables are tender. (Everyone likes their vegetables differently so cook to your liking!)
2. Put a large handful of corn in the pot as well as the poultry seasoning, salt (if needed), and pepper. Make sure to stir!
3. Dissolve Cornstarch in water and whisk together. Then add the cornstarch/water mixutre into your pot. Bring to a boil and wait for it to thicken.
4. Once it has thickened add Chicken and let cook for about 5 minutes or more
5. Serve with some crusty bread!
