I have a confession. I'm in love with a good piece of red meat. I love me some steak real bad. and by bad, I mean good. Yummy.
This recipe is absolutely delicious and I originally found it here but I tweaked it to my liking.
What makes this recipe? Two things. First, the meat. Sometimes it is more expensive but you are paying for quality. A good piece of steak will make this meal so much better. Second, the cumin. The originally recipe says 1 tsp. cumin. Honestly I don't know how much I put on because I just sprinkle to my little hearts content but it's probably atleast a Tablespoon. Seriously, the more flavor the better...can't over do here people.
I love the simplicity of this meal. The first 4 or 5 times I made it we didn't add anything to these fajitas. Tonight was the first time I added guacamole and it was delicious. But really, this meal is fine by itself. Feel free to add guacamole, sour cream, or even cheese to this but it doesn't need it.
Ingredients:
1 lb sirloin steak (I fillet mine), really any type of steak will do.
atleast 3 tsps of cumin. (Be adventurous and don't measure it out!)
Salt and Pepper
3 bell peppers, sliced. (whatever color you want! but mix it up!)
1 T. Olive Oil
8 small flour tortillas
Guacamole (optional)
Sour Cream (Optional)
Directions:
1. Heat a large skillet over Medium- high heat. Season the meat with cumin (Lots!), salt and Pepper.
2. In a large bowl, combine the sliced bell peppers with Olive oil and about 1/4 tsp of salt and pepper. Stir to coat the peppers really well.
3. Add the meat to the skillet and cook on each side for about 3-4 minutes. This really depends on how red or not red you like your meat. I like mine nice and pink. Remove the meat to a plate. Let the meat sit for about 5 minutes before you slice it.
4. Now in the same skillet add the peppers and cook until tender. I like to do this in the same pan because then you get more of that cumin flavor on the peppers. After slicing the meat, add it back to the pan just to make sure the meat is warm before you serve.
5. Finally, Fill a warm tortilla with meat and peppers and be prepared to fall in love. You can garnish with sour cream, cheese, or my favorite Guacamole!

I make chicken fajitas a lot but have never tried steak & peppers. That looks really delicious!!! I pinned it for future reference :)
