I've always loved Sandwiches. I'm a bit of a sandwich snob to tell you the truth. I do not consider Subway a real sandwich although I will eat one as a last resort. I lived Back east for several years and had my taste of so many divine deli sandwiches and I've been ruined ever since.
The funny thing about panini's is that it takes a regular old sandwich and makes it spectacular. I can't really describe it but something about putting the olive oil on the bread and putting it in that panini maker transforms it. I could eat a panini every day of the week.
Ham and Pepper Jack Panini
Ingredients:
2 slices of Sourdough Bread
Mustard
2-3 slices of Deli Ham (more or less to your liking)
1 1/2 slices of Pepper Jack Cheese
Onion
Diced Jalapenos (optional)
Salt
Pepper
Oregano
Olive Oil
Directions:
1. Spread as much mustard onto one slice of the bread.
2. Place ham on bread followed by the cheese.
3. Put as much Onion, jalapenos , salt , pepper, and oregano to your liking.
4. Spread Olive Oil on both sides of the sandwich, put on your panini maker and cook until lightly browned.
(This Recipe is also delicious with Pastrami)

Oh my goodness -- that looks soooo good! I 100% agree with you about the beauty of paninis and how Subway isn't all it's cracked up to be. :) I think I'll have to try out this recipe! Eek! Thanks :) :)
