The first time I tried this recipe I distinctly remember this conversation.
Husband: what's for dinner?
Me: I am making a new recipe..it's Huevos Rancheros
H: Huh...Okay (lots of hesitation and uncertainty)
I loved this recipe because it was so simple and so quick. We are talking 15 minutes here people or possibly less. This is one of those cheap, easy, and fast recipes. I love those for those days where you are just too tired to make anything else but you need something good in your belly.
So I made the dinner and handed a dish to my sweet husband.
H: WOW this looks great
M: Thanks, I hope it is.
He continued to tell me that it was absolutely delicious over and over and over again. He couldn't stop talking about it. A few short days later he requested I make it again. Success!
We have made it with many different salsas and it has been good with every one. You'll have to experiment with salsas that you like and find out which one you like with this dish the very best.

Huevos Rancheros
Ingredients:
1 can black beans, drained and rinsed.
1 can salsa (whichever one you prefer)
4 eggs
Green Onions
Cilantro
Salt and Pepper to taste
Sour Cream
Directions:
1. In a skillet combine black beans and salsa over medium heat.
2. Once simmering dig four wells and crack an egg into each well.
3. Cover and let eggs cook for 3-4 minutes. (How long you cook your eggs will greatly depend on how you like your eggs. If you like them runny then less time or more etc...)
4. Top with green onions, cilantro, salt, pepper, and sour cream.
